For the Marinade and Sauce:

  • 1 cup apricot preserves
  • 1 cup barbecue sauce (your favorite brand)
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • Fresh herbs (such as parsley or cilantro) for garnish

Instructions

  • Prepare the Marinade and Sauce:
    • In a medium bowl, combine the apricot preserves, barbecue sauce, soy sauce, Dijon mustard, minced garlic, ground ginger, salt, and pepper.
    • Mix well to combine.
  • Marinate the Chicken:
    • Place the chicken breasts or thighs in a large resealable plastic bag or a shallow dish.
    • Pour half of the marinade over the chicken, reserving the other half for basting and serving.
    • Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for more intense flavor.
  • Cook the Chicken:
    • Preheat your grill to medium-high heat, or preheat your oven to 375°F (190°C).
    • Remove the chicken from the marinade and discard the used marinade.
    • If grilling, brush the grill grates with olive oil to prevent sticking. If baking, grease a baking dish with olive oil.
    • Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). If baking, place the chicken in the prepared baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Baste and Serve:
    • During the last few minutes of cooking, baste the chicken with the reserved marinade.
    • Remove the chicken from the grill or oven and let it rest for a few minutes.
    • Garnish with fresh herbs before serving.

  • Ensure the chicken is marinated for at least 1 hour for the best flavor.
  • Use a meat thermometer to ensure the chicken is cooked to a safe internal temperature of 165°F (74°C).
