  • 12 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup baby spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tbsp butter
  • ½ cup chicken broth

Instructions

  • Cook fettuccine according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink (about 2-3 minutes per side). Remove and set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant. Add sun-dried tomatoes and Italian seasoning.
  • Pour in chicken broth and heavy cream, stirring well. Simmer for 2-3 minutes.
  • Stir in Parmesan cheese and spinach, cooking until the cheese melts and spinach wilts.
  • Return shrimp to the skillet and combine with the sauce.
  • Toss in cooked fettuccine, mix well, and cook for another minute.
  • Serve hot, garnished with extra Parmesan and red pepper flakes if desired.
