Ingredients

Scale

Main Ingredients:

  • 2 tablespoons olive oil or unsalted butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) whole peeled tomatoes (San Marzano recommended for best flavor)
  • 1 tablespoon tomato paste
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1/2 teaspoon dried oregano or thyme (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup heavy cream or half-and-half (optional, for a creamy texture)
  • Fresh basil leaves, chopped, for garnish

Optional Toppings:

  • Grated Parmesan cheese
  • Croutons or toasted bread cubes
  • A drizzle of olive oil or balsamic glaze
  • A dollop of sour cream or Greek yogurt

Instructions

  • Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and sauté for 5-7 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.
  • Add Tomatoes: Stir in the tomato paste and cook for 2 minutes to deepen the flavor. Add the whole peeled tomatoes along with their juices, breaking them up with a spoon. Pour in the vegetable or chicken broth.
  • Season and Simmer: Add sugar (if using), dried oregano or thyme (if using), and season with salt and freshly ground black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
  • Blend the Soup: Use an immersion blender to puree the soup until smooth, or carefully transfer the soup in batches to a blender and blend until smooth. Return the soup to the pot if needed.
  • Finish with Cream (Optional): Stir in the heavy cream or half-and-half if you prefer a creamy texture. Heat through for another 2-3 minutes, but do not bring to a boil.
  • Serve: Ladle the soup into bowls and garnish with fresh basil. Add any desired toppings such as grated Parmesan, croutons, a drizzle of olive oil or balsamic glaze, or a dollop of sour cream.

Notes

  • Customization: Adjust the sweetness and creaminess to your liking. For a spicier version, add a pinch of red pepper flakes.
  • Storage: Store leftover soup in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat gently on the stovetop.
