  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 small flour tortillas, torn into pieces
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown ground beef over medium heat. Drain excess fat.
  • Add taco seasoning, diced tomatoes with green chilies, and salsa to the beef. Stir to combine.
  • In a greased 9x13 inch baking dish, layer half of the torn tortillas.
  • Spread half of the beef mixture over the tortillas, followed by a layer of black beans.
  • Sprinkle half of the cheddar and Monterey Jack cheese over the beef and beans.
  • Repeat with the remaining tortillas, beef mixture, and cheeses.
  • Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for 5 minutes before serving. Top with sour cream, olives, and green onions if desired.

  • Customize by adding corn, jalapeños, or refried beans for extra flavor.
  • You can use ground turkey or chicken for a lighter version.
