  • 4 cups fresh or canned pitted cherries (drained if using canned)
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, combine the cherries, 1 cup of sugar, lemon juice, and water. Bring to a boil over medium heat.
  • In a small bowl, mix the cornstarch with a little water to make a slurry. Stir into the cherry mixture and cook until thickened, about 2-3 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt. Add the melted butter and milk, stirring until just combined.
  • Pour the cherry mixture into a 9x13-inch baking dish. Pour the batter evenly over the cherries.
  • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the topping comes out clean.
  • Let cool slightly before serving.

Notes

  • For extra flavor, add a pinch of cinnamon to the cherry filling.
