  • 1 cup yellow cornmeal

  • 1/4 cup vegetable oil
  • 1 large egg
  • 6 hot dogs, cut into thirds
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  • Preheat oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, whisk together milk, vegetable oil, and egg.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Spoon a tablespoon of batter into each muffin cup.
  • Place a piece of hot dog into the center of each muffin cup, pressing down slightly.
  • Optionally, sprinkle shredded cheddar cheese on top of each muffin.
  • Bake for 12-15 minutes, or until muffins are golden and a toothpick inserted into the cornbread comes out clean.
  • Allow to cool for a few minutes before serving.
