  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 red bell pepper, diced
  • 3 cups chicken broth (or vegetable broth)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 ½ cups grated Parmesan cheese
  • 2 cups baby spinach or kale (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp red pepper flakes (optional)
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 cup diced potatoes or 1 cup uncooked pasta (optional)

Instructions

  • Heat olive oil and butter in a large pot over medium heat.
  • Add Italian sausage, cooking until browned. Remove and set aside.
  • In the same pot, sauté onions, garlic, carrots, celery, and bell pepper until softened.
  • Add broth, tomatoes, oregano, basil, red pepper flakes, bay leaf, salt, and pepper. Bring to a boil.
  • Stir in potatoes or pasta (if using) and simmer for 15-20 minutes until tender.
  • Return sausage to the pot and pour in the heavy cream. Stir in Parmesan cheese.
  • Add spinach or kale (optional), allowing it to wilt.
  • Adjust seasoning if needed and serve with extra Parmesan, cracked black pepper, and crusty bread.
