  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: Sour cream, chopped cilantro, diced avocado, crushed tortilla chips, sliced jalapeños

Instructions

  • Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Add diced onion and garlic to the pot. Cook until the onion is soft and translucent.
  • Stir in taco seasoning, diced tomatoes with green chilies, black beans, and corn.
  • Add the cream of chicken soup and chicken broth, stirring until well combined.
  • Pour in the heavy cream or half-and-half, then bring the soup to a simmer.
