  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ½ cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 5-7 minutes on each side until golden and cooked through. Set aside.
  • In the same skillet, melt butter and sauté minced garlic until fragrant.
  • Add chicken broth, heavy cream, and Parmesan cheese, stirring until the sauce is smooth.
  • Stir in sun-dried tomatoes and spinach. Let the spinach wilt in the sauce.
  • Return the chicken to the skillet and simmer for 3-4 minutes. Serve warm with optional garnishes like fresh basil or red pepper flakes.
