  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup frozen peas and carrots (optional)
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • Add the uncooked rice, condensed cream of chicken soup, condensed cream of mushroom soup, chicken broth, and milk.
  • Stir in the shredded cheddar cheese, onion, garlic, salt, black pepper, paprika, thyme, and parsley.
  • Add the frozen peas and carrots if using.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  • Stir before serving and garnish with fresh parsley.
