This easy homemade lasagna recipe is a comforting classic, combining layers of rich meat sauce made with ground beef, a creamy ricotta cheese mixture, and perfectly cooked lasagna noodles. For the Meat Sauce:

  • 1 lb ground beef (450g)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 can (24 oz) tomato sauce
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 tsp sugar

For the Cheese Mixture:

  • 2 cups ricotta cheese (whole milk preferred)
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional)

For the Lasagna Assembly:

  • 12-15 lasagna noodles, cooked or no-boil
  • 1 cup shredded mozzarella cheese (for topping)
  • 1/4 cup freshly grated Parmesan cheese (for topping)

Instructions

  • Meat Sauce: In a large skillet, heat olive oil over medium heat. Add the onion and sauté until soft. Stir in the garlic and cook for 1 minute. Add the ground beef and cook until browned. Drain any excess fat. Stir in the tomato sauce, tomato paste, crushed tomatoes, basil, oregano, salt, pepper, and sugar. Simmer for 20-30 minutes, stirring occasionally.
  • Cheese Mixture: In a large bowl, combine ricotta cheese, egg, 2 cups mozzarella, Parmesan, and parsley (if using). Mix until well combined.
  • Assembly: Preheat oven to 375°F (190°C). Spread a thin layer of meat sauce on the bottom of a 9x13 inch baking dish. Add a layer of lasagna noodles, followed by a layer of the cheese mixture, and then more meat sauce. Repeat layers, ending with a final layer of noodles topped with the remaining meat sauce. Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  • Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is melted and bubbly. Let the lasagna rest for 10 minutes before serving.

Notes

  • Consider using Italian sausage in place of or in addition to ground beef for extra flavor.
  • Make the meat sauce a day ahead for even deeper flavors.
