  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 8 small flour or corn tortillas (cut into quarters)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup diced onions (optional)
  • 1/4 cup sliced black olives (optional)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a skillet, cook ground beef over medium heat until browned, about 6-7 minutes. Drain excess fat.
  • Add taco seasoning, diced tomatoes with green chilies, black beans, and corn to the beef. Stir to combine and simmer for 5 minutes.
  • In the prepared baking dish, layer half of the tortilla pieces on the bottom.
  • Spread half of the beef mixture over the tortillas, followed by half of the sour cream, salsa, and cheese.
  • Repeat the layers with the remaining tortillas, beef mixture, sour cream, salsa, and cheese.
  • Top with diced onions and black olives if desired.
  • Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  • Let cool for a few minutes before serving. Garnish with fresh cilantro or green onions if desired.
