This French Onion Stuffed Potatoes recipe is a delicious combination of baked potatoes, caramelized onions, and melted cheese. Perfect for a comforting side dish or a vegetarian main course, these stuffed potatoes are easy to prepare and packed with flavor.

  • 4 large russet potatoes
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup beef or vegetable broth
  • 1 cup shredded Gruyère cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce potatoes with a fork and bake for 50-60 minutes until tender.
  3. While the potatoes bake, heat olive oil and butter in a skillet over medium heat.
  4. Add sliced onions, sugar, and a pinch of salt. Cook, stirring often, until caramelized (about 25-30 minutes).
  5. Deglaze the skillet with broth, cooking until the liquid reduces. Set aside.
  6. Once baked, slice the top off each potato and scoop out the center, leaving a sturdy shell.
  7. Mash the scooped-out potato and mix with caramelized onions, half of the cheese, salt, and pepper.
  8. Stuff the mixture back into the potato shells and top with remaining cheese.
  9. Bake the stuffed potatoes at 375°F (190°C) for 10-15 minutes until cheese is melted and bubbly.
  10. Garnish with fresh parsley and serve warm.

  • For a heartier dish, add cooked bacon or shredded chicken to the filling.
  • Substitute Gruyère with Swiss or mozzarella for a different flavor.
