Ingredients

Scale
  • 2 boneless, skinless chicken breasts (cubed)
  • 4 medium potatoes (diced)
  • 4 cloves garlic (minced)
  • 1/4 cup butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes, season with salt, pepper, and paprika. Cook for 10-12 minutes, turning occasionally, until golden and crispy. Remove potatoes and set aside.
  2. In the same skillet, melt butter and add cubed chicken. Season with salt, pepper, and thyme. Cook for 6-8 minutes until the chicken is browned and cooked through.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Return the potatoes to the skillet and toss everything together in the garlic butter sauce.
  5. Garnish with fresh parsley and serve hot.

Notes

  • You can add vegetables like green beans or carrots for extra nutrition.
  • For a lighter version, reduce the butter or use olive oil instead.
