  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2/3 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  • In a separate bowl, cream butter and brown sugar until fluffy. Add molasses, egg, and vanilla extract; mix well.
  • Gradually add dry ingredients to the wet mixture until fully incorporated.
  • Chill the dough for at least 1 hour.
  • Preheat oven to 350°F (175°C). Roll dough out to 1/4-inch thickness and cut with cookie cutters.
  • Place cookies on lined baking sheets and bake for 8–10 minutes.
  • Cool and decorate as desired.
