Ingredients

  • Ground Beef: 1 pound of lean ground beef.
  • Tortillas: 8-10 flour or corn tortillas.
  • Onion: 1 medium onion, finely chopped.
  • Garlic: 3 cloves of garlic, minced.
  • Enchilada Sauce: 2 cups of red enchilada sauce (store-bought or homemade).
  • Cheese: 2 cups of shredded cheddar or Mexican blend cheese.
  • Olive Oil: 2 tablespoons of olive oil.
  • Spices: 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of paprika, 1 teaspoon of dried oregano, salt and pepper to taste.
  • Tomato Paste: 2 tablespoons of tomato paste.
  • Beef Broth: 1/4 cup of beef broth.
  • Green Chilies: 1 can (4 ounces) of diced green chilies.
  • Fresh Cilantro: Chopped, for garnish.
  • Optional Ingredients: Black Beans: 1 can (15 ounces), drained and rinsed; Corn: 1 cup of frozen or canned corn; Jalapeños: Sliced, for added heat; Avocado: Sliced, for a creamy topping; Sour Cream: For serving.

Instructions

  • Preheat your oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cook until softened.
  • Add ground beef, cook until browned. Stir in tomato paste, chili powder, cumin, paprika, oregano, salt, and pepper.
  • Pour in beef broth and diced green chilies, simmer for a few minutes.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Fill tortillas with the beef mixture and some cheese, roll up and place in the dish.
  • Pour remaining enchilada sauce over the top, sprinkle with remaining cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped cilantro and serve with optional toppings.

Notes

  • Customize with your favorite toppings like sliced avocado and sour cream.
  • Use either flour or corn tortillas based on your preference.
