Hamburger Helper Lasagna is an easy, cheesy one-pan meal featuring ground beef, mafalda pasta, tomato sauce, and a blend of mozzarella and Parmesan. With Italian seasonings and a rich cheesy sauce, this comforting dish is a quicker take on classic lasagna, perfect for weeknight dinners!

  • 1 lb ground beef (or substitute ground turkey or chicken)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups beef broth (or chicken broth for a lighter version)
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 teaspoons Italian seasoning (or a mix of basil, oregano, and thyme)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes (optional)
  • 2 cups uncooked mafalda pasta (or broken lasagna noodles)
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

For the Cheesy Sauce:

  • 1 ½ cups mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • Optional: Ricotta cheese (for added creaminess)

Instructions

  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic, and sauté until softened.
  • Stir in beef broth, tomato sauce, diced tomatoes, Italian seasoning, garlic powder, onion powder, and red pepper flakes. Bring to a simmer.
  • Add uncooked pasta, cover, and simmer for about 12-15 minutes, or until the pasta is cooked through.
  • Stir in mozzarella and Parmesan cheese until melted and creamy.
  • Optional: Add a scoop of ricotta for extra creaminess.
  • Season with salt and pepper to taste. Garnish with fresh basil or parsley.

Notes

  • For a lighter version, use ground turkey or chicken and chicken broth.
  • You can substitute mafalda pasta with any short pasta, like rotini or penne.
  • Add more red pepper flakes for extra heat if desired.
