This Italian chop-chop salad is a vibrant mix of fresh vegetables, savory meats, and tangy cheese, all tossed in a zesty dressing. Perfect for lunch or dinner, this hearty salad delivers bold flavors in every bite!

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely sliced
  • 1/2 cup black olives, sliced
  • 1/2 cucumber, diced
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup mozzarella cheese, diced
  • 1/2 cup provolone cheese, diced
  • 1/2 cup salami, chopped
  • 1/2 cup ham, chopped
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup parmesan cheese, grated

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  • In a large salad bowl, combine romaine lettuce, cherry tomatoes, red onion, black olives, cucumber, roasted red peppers, mozzarella, provolone, salami, ham, pepperoncini, and fresh basil.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper.
  • Pour the dressing over the salad and toss until evenly coated.
  • Sprinkle with grated parmesan cheese and serve immediately.
