Lasagna Roll Ups are a delightful twist on traditional lasagna, featuring tender lasagna noodles rolled with a savory filling of ground beef or Italian sausage, ricotta, mozzarella, and Parmesan cheeses, all smothered in marinara sauce. This easy-to-make dish is perfect for family dinners, offering a comforting and cheesy meal with a touch of Italian seasoning and fresh parsley.

Ingredients

  • Lasagna Noodles: 12-16 large, cooked al dente
  • Ground Beef or Italian Sausage: 1 pound, cooked and crumbled
  • Ricotta Cheese: 2 cups
  • Mozzarella Cheese: 2 cups, shredded
  • Parmesan Cheese: 1 cup, grated
  • Marinara Sauce: 3 cups
  • Egg: 1 large, lightly beaten
  • Garlic: 2 cloves, minced
  • Italian Seasoning: 2 teaspoons
  • Fresh Parsley: 2 tablespoons, chopped (plus extra for garnish)
  • Salt and Pepper: to taste
  • Olive Oil: for drizzling

Instructions

  • Preheat your oven to 375°F (190°C).
  • Lay cooked lasagna noodles flat on a clean surface.
  • In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, and parsley. Season with salt and pepper.
  • Spread the cheese mixture evenly onto each lasagna noodle.
  • Sprinkle crumbled ground beef or sausage over the cheese mixture.
  • Roll each noodle up and place them seam-side down in a baking dish coated with a thin layer of marinara sauce.
  • Pour remaining marinara sauce over the roll-ups and drizzle with olive oil.
  • Cover the dish with foil and bake for 25 minutes.
  • Uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
  • Garnish with extra parsley and serve hot.

Notes

  • For a vegetarian version, omit the ground beef or sausage and add sautéed spinach or mushrooms.
  • Use no-boil lasagna noodles for quicker preparation.
  • Can be prepared ahead and frozen for up to 3 months.
