  • 1/2 cup (1 stick) butter, plus extra for greasing the baking dish
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional)
  • 1 cup breadcrumbs (optional, for topping)
  • 1/2 cup grated Parmesan cheese (optional, for topping)
  • 1 cup crispy fried onions (optional, for topping)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
  • Cook Potatoes: Boil the potato chunks in salted water until tender, about 20-25 minutes. Drain well.
  • Mash Potatoes: In a large bowl, mash the potatoes with butter, milk, sour cream, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  • Assemble Casserole: Spread the mashed potatoes evenly in the greased baking dish. Top with shredded cheddar cheese and chopped green onions, if using.
  • Add Toppings (Optional): If desired, sprinkle breadcrumbs, grated Parmesan cheese, and crispy fried onions over the top of the casserole.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and the cheese is melted and bubbly.
