  • 1 cup shredded Mexican cheese blend
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 2 tablespoons butter
  • 1/4 cup diced tomatoes (optional)
  • 2 tablespoons chopped cilantro (for garnish)

Instructions

  • Preheat a large skillet over medium heat and add olive oil.
  • Season chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • Sear the chicken breasts for 5-6 minutes on each side until cooked through and golden brown. Remove from skillet and set aside.
  • In the same skillet, melt butter, then stir in heavy cream and chicken broth. Let simmer for 2-3 minutes.
  • Gradually add shredded cheese, stirring constantly until fully melted and the sauce is smooth.
  • Return the chicken breasts to the skillet, spoon cheese sauce over them, and simmer for 3-4 minutes to combine flavors.
  • Garnish with diced tomatoes and cilantro, if desired, and serve hot.
