  • 8 oz elbow macaroni (or any pasta)
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1 cup salsa

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and the onions are soft. Drain excess fat.
  3. Stir in the taco seasoning, salsa, and diced jalapeños (if using). Simmer for 5 minutes.
  4. In a separate pot, melt butter over medium heat, then stir in the milk and shredded cheddar and Monterey Jack cheeses until melted and smooth.
  5. Combine the cooked pasta with the cheese sauce, then fold in the seasoned beef mixture. Stir until well combined and creamy.
