Ingredients

Scale

Crust

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 4 tbsp unsalted butter, melted

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 1/4 cup fresh key lime juice (or regular lime juice)
  • 1 tsp lime zest
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy cream, whipped

Toppings

  • Whipped cream
  • Extra lime zest or lime slices for garnish

Instructions

  1. In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Divide the mixture evenly into 6 small jars or glasses, pressing it down to form a crust layer.
  2. In a medium bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk, key lime juice, lime zest, and vanilla extract, mixing until creamy and well combined.
  3. Fold the whipped cream into the cheesecake mixture until light and fluffy.
  4. Spoon or pipe the cheesecake filling over the graham cracker crusts in each jar, smoothing the tops.
  5. Refrigerate for at least 2 hours before serving.
  6. Top with whipped cream, extra lime zest, or lime slices just before serving.

Notes

  • You can use regular lime juice if key limes aren’t available.
  • Make these jars up to 2 days ahead for a perfect make-ahead dessert.
  • Substitute graham crackers with digestive biscuits or vanilla wafers for a different twist.
