  • 2 large chicken breasts (cut into strips or chunks)
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 medium onion (diced)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with Italian seasoning, paprika, salt, and pepper. Sear chicken until golden brown on both sides, then remove from the skillet and set aside.
  • In the same skillet, sauté onion and garlic until fragrant.
  • Stir in rice, chicken broth, and heavy cream. Bring to a boil, then reduce heat to low.
  • Return chicken to the skillet, cover, and cook for 20-25 minutes, stirring occasionally, until rice is tender and chicken is cooked through.
  • Stir in Parmesan cheese until melted and creamy.
  • Garnish with fresh parsley before serving.
