  • 1 tbsp cornstarch

  • 8-10 egg roll wrappers
  • Oil for frying

Instructions

  • In a medium bowl, combine peaches, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Mix well and let sit for 10 minutes.
  • Lay out an egg roll wrapper and place 2 tablespoons of the peach mixture in the center. Fold the bottom corner up over the filling, fold in the sides, and roll up tightly. Seal the edges with a bit of water.
  • Heat oil in a deep fryer or large skillet to 350°F (175°C).
  • Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  • Drain on paper towels and dust with powdered sugar before serving.
