  • 1 lb kielbasa sausage, sliced
  • 4 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream or milk
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add kielbasa slices and cook until browned. Remove and set aside.
  • In the same pot, add onions, garlic, carrots, and celery. Sauté until softened.
  • Add potatoes, chicken broth, and smoked paprika. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
  • Stir in cream or milk and return the cooked kielbasa to the pot. Simmer for an additional 5 minutes.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
