1 cup of fresh or canned corn kernels (drained if using canned)
1/2 cup of all-purpose flour
1/4 cup of cornmeal
1 teaspoon of baking powder
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of smoked paprika (optional)
2 large eggs
1/4 cup of milk
2 tablespoons of finely chopped green onions
1/4 cup of grated cheddar cheese (optional)
Vegetable oil for frying
Instructions
In a large bowl, combine flour, cornmeal, baking powder, salt, black pepper, and smoked paprika.
In a separate bowl, whisk together the eggs and milk.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the corn kernels, green onions, and cheddar cheese if using.
Heat vegetable oil in a skillet over medium heat.
Drop spoonfuls of the batter into the hot oil and cook until golden brown on both sides, about 2-3 minutes per side.
Transfer to a paper towel-lined plate to drain excess oil.
