This easy Reuben Quesadillas recipe combines savory corned beef, melted Swiss cheese, tangy sauerkraut, and creamy dressing in a golden, crispy tortilla. Perfect for a quick snack, lunch, or dinner, this recipe is a fun twist on the classic Reuben sandwich.

Ingredients

  • 4 large flour tortillas
  • 1 cup cooked corned beef, thinly sliced or shredded
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, drained
  • 1/4 cup Thousand Island dressing
  • 2 tbsp butter, for frying

Instructions

  1. Heat a large skillet over medium heat.
  2. Spread a thin layer of Thousand Island dressing on one side of each tortilla.
  3. On half of each tortilla, layer corned beef, sauerkraut, and shredded Swiss cheese.
  4. Fold the tortilla in half, pressing gently to seal.
  5. Melt butter in the skillet and cook each quesadilla until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
  6. Slice into wedges and serve warm with extra Thousand Island dressing for dipping.
