This Roast Beef Reuben Recipe combines tender roast beef, melted Swiss cheese, tangy sauerkraut, and creamy Thousand Island dressing on rye bread. Perfectly grilled for a crispy, golden crust, this sandwich is a must-try for lunch or dinner.

  • 4 slices of rye bread
  • 8 oz sliced roast beef
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup Thousand Island dressing
  • 2 tbsp butter, softened

Instructions

  • Preheat a skillet over medium heat.
  • Spread butter on one side of each slice of rye bread.
  • On the unbuttered side of two slices, layer roast beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
  • Top with the remaining bread slices, buttered side up.
  • Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
