6-8 sausages (pork, beef, chicken, or vegetarian)
2 cans cannellini beans, rinsed and drained
1 large onion, finely chopped
3 cloves garlic, minced
2 carrots, peeled and sliced
2 stalks celery, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 can chopped tomatoes
2 tablespoons tomato paste
2 cups chicken broth
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
2 bay leaves
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat.
Brown the sausages on all sides, then remove and set aside.
In the same skillet, sauté onion, garlic, carrots, celery, and bell peppers until softened.
Stir in tomato paste, paprika, and thyme, and cook for 2 minutes.
Add chopped tomatoes, chicken broth, and bay leaves. Bring to a simmer.
Add cannellini beans and browned sausages to the skillet.
Transfer the mixture to a casserole dish and cover.
Bake in the preheated oven for 30-35 minutes, until sausages are fully cooked.
Remove bay leaves before serving and garnish with fresh parsley.
