Make a hearty Sausage and Bean Casserole with sausages, cannellini beans, and fresh vegetables. A comforting and flavorful dish ideal for family dinners!

Ingredients

  • 6-8 sausages (pork, beef, chicken, or vegetarian)
  • 2 cans cannellini beans, rinsed and drained
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can chopped tomatoes
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Brown the sausages on all sides, then remove and set aside.
  • In the same skillet, sauté onion, garlic, carrots, celery, and bell peppers until softened.
  • Stir in tomato paste, paprika, and thyme, and cook for 2 minutes.
  • Add chopped tomatoes, chicken broth, and bay leaves. Bring to a simmer.
  • Add cannellini beans and browned sausages to the skillet.
  • Transfer the mixture to a casserole dish and cover.
  • Bake in the preheated oven for 30-35 minutes, until sausages are fully cooked.
  • Remove bay leaves before serving and garnish with fresh parsley.

  • For a vegetarian option, use vegetarian sausages and vegetable broth.
