Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms (sliced)
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 3 garlic cloves (minced)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden. Remove and set aside.
  • In the same skillet, melt butter and sauté mushrooms until tender, about 5 minutes. Add minced garlic and cook for 1 minute.
  • Pour in white wine and chicken broth, scraping up browned bits from the skillet. Stir in thyme.
  • Return chicken to the skillet and simmer for 15 minutes, or until the chicken is fully cooked and sauce has reduced.
  • Garnish with parsley and serve warm.

Notes

  • Use a dry white wine like Sauvignon Blanc or Pinot Grigio for best results.
  • Pair with mashed potatoes, rice, or a side of roasted vegetables.
  • For a thicker sauce, whisk 1 teaspoon of cornstarch into the broth before adding to the skillet.
