  • 6 cups diced potatoes (fresh or frozen hash browns)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/4 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped parsley for garnish

Instructions

  • Spray the inside of your slow cooker with non-stick cooking spray.
  • In a large bowl, mix together the cream of chicken soup, sour cream, melted butter, garlic powder, onion powder, salt, and pepper.
  • Add the diced potatoes and 1 1/2 cups of shredded cheddar cheese to the bowl. Mix until well combined.
  • Transfer the mixture to the slow cooker and spread evenly.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender.
  • In the last 15 minutes of cooking, sprinkle the remaining cheddar cheese on top and cover until melted.
  • Serve warm, garnished with parsley if desired.
