  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • 1/2 cup diced onions (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a pan, heat olive oil and sauté diced onions until soft (if using). Add shredded chicken, garlic powder, chili powder, cumin, salt, and pepper. Mix well.
  • Warm the flour tortillas and evenly distribute the chicken mixture and cheese. Roll them tightly into burritos.
  • Place burritos in a greased baking dish, seam side down.
  • Mix enchilada sauce and sour cream in a bowl, then pour over the burritos.
  • Sprinkle additional cheese on top and bake for 20-25 minutes, or until cheese is melted and bubbly.
  • Serve hot and garnish with fresh cilantro, if desired.
