2 cups shredded cooked chicken
1 cup shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1 cup enchilada sauce
1/2 cup sour cream
1/2 cup diced onions (optional)
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cumin
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a pan, heat olive oil and sauté diced onions until soft (if using). Add shredded chicken, garlic powder, chili powder, cumin, salt, and pepper. Mix well.
Warm the flour tortillas and evenly distribute the chicken mixture and cheese. Roll them tightly into burritos.
Place burritos in a greased baking dish, seam side down.
Mix enchilada sauce and sour cream in a bowl, then pour over the burritos.
Sprinkle additional cheese on top and bake for 20-25 minutes, or until cheese is melted and bubbly.
