  • Cake:
    • 2 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground allspice
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 1/2 cup packed brown sugar
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup whole milk
    • 2 cups peeled, chopped apples (Granny Smith or Honeycrisp recommended)
  • Caramel Sauce:
    • 1 cup granulated sugar
    • 1/4 cup water
    • 1/2 cup heavy cream
    • 2 tablespoons unsalted butter
    • 1 teaspoon vanilla extract
    • A pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  • Gradually add the flour mixture to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Fold in the chopped apples.
  • Pour the batter into the prepared cake pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  • While the cake cools, prepare the caramel sauce. In a medium saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves and turns a deep amber color. Carefully add the heavy cream, butter, vanilla, and salt, stirring constantly until smooth. Let the sauce cool slightly before drizzling over the cake.

Notes

  • For best results, use tart apples like Granny Smith or Honeycrisp.
  • Make sure the cake is completely cool before adding the caramel sauce to prevent it from soaking in too much.
