1 lb ground beef
4 medium russet potatoes, thinly sliced
1 cup frozen mixed vegetables (peas, carrots, corn)
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 1/2 cups shredded cheddar cheese
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1 tbsp olive oil (for greasing the pan)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Season with garlic powder, onion powder, salt, and pepper.
Thinly slice potatoes and arrange half of them in the bottom of the prepared baking dish.
Spread half the cooked ground beef and half of the frozen vegetables over the potatoes.
In a small bowl, mix cream of mushroom soup with milk, then pour half over the beef and veggie layer.
Repeat the layers with the remaining potatoes, ground beef, vegetables, and soup mixture.
Cover with foil and bake for 45 minutes.
Remove the foil, sprinkle shredded cheese on top, and bake uncovered for another 15 minutes, or until the cheese is bubbly and golden.
Let the casserole cool slightly before serving.
Notes
For a heartier dish, add a layer of crispy bacon bits or sautéed mushrooms.
Sweet potatoes can be used for a sweeter variation.
Store leftovers in the refrigerator for up to 3 days.
