This ground beef hobo casserole recipe is a classic comfort food dish. Featuring layers of seasoned ground beef, tender potatoes, veggies, and melted cheese, it’s easy to prepare and perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 4 medium russet potatoes, thinly sliced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing the pan)

Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Season with garlic powder, onion powder, salt, and pepper.
  • Thinly slice potatoes and arrange half of them in the bottom of the prepared baking dish.
  • Spread half the cooked ground beef and half of the frozen vegetables over the potatoes.
  • In a small bowl, mix cream of mushroom soup with milk, then pour half over the beef and veggie layer.
  • Repeat the layers with the remaining potatoes, ground beef, vegetables, and soup mixture.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil, sprinkle shredded cheese on top, and bake uncovered for another 15 minutes, or until the cheese is bubbly and golden.
  • Let the casserole cool slightly before serving.

Notes

  • For a heartier dish, add a layer of crispy bacon bits or sautéed mushrooms.
  • Sweet potatoes can be used for a sweeter variation.
  • Store leftovers in the refrigerator for up to 3 days.
