Ingredients

  • 2 cups cherry tomatoes, halved, or 3 large tomatoes, diced
  • 2 ripe avocados, diced
  • 4 cups fresh arugula
  • 1 small red onion, thinly sliced
  • 1 large cucumber, diced
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large bowl, combine cherry tomatoes, avocados, arugula, red onion, cucumber, and fresh basil.
  2. In a small bowl, whisk together lemon juice, olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Add crumbled feta cheese if desired and toss again.
  5. Serve immediately.

Notes

 

  • For a vegan option, omit the feta cheese.
  • Best served fresh but can be stored in an airtight container in the refrigerator for up to 1 day.
