These cheesy zucchini muffins are a perfect quick snack or breakfast idea, packed with flavor and ready in just 30 minutes. A delicious and healthy way to enjoy zucchini.

 

Ingredients

  • 1 medium zucchini, grated

  • 1 ½ cups all-purpose flour

  • 1 cup shredded cheddar cheese

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp garlic powder

  • 1 large egg

  • ½ cup milk

  • ¼ cup olive oil

  • 1 tbsp honey

  • ¼ cup chopped fresh herbs (optional, such as parsley or chives)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line with paper liners.

  2. Grate the zucchini and lightly squeeze out excess moisture using a paper towel.

  3. In a large bowl, combine flour, baking powder, baking soda, salt, and garlic powder.

  4. In a separate bowl, whisk together the egg, milk, olive oil, and honey.

  5. Add the wet ingredients to the dry ingredients, then stir in the grated zucchini and shredded cheese.

  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.

  7. Bake for 20-25 minutes or until a toothpick comes out clean.

  8. Let cool for a few minutes before removing from the tin.

Notes

  • Add some herbs like chives for extra flavor.

  • For a dairy-free version, use a non-dairy cheese substitute.
