  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  • Heat olive oil or butter in a large pot over medium heat.
  • Sauté onions, garlic, carrots, and celery until softened, about 5 minutes.
  • Add chicken broth, dried thyme, parsley, salt, and pepper. Bring to a boil.
  • Stir in shredded chicken and gnocchi, reduce heat to simmer for 10 minutes.
