  • 4 large eggs

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Ground nutmeg (for topping)

Instructions

  • Preheat your oven to 325°F (165°C).
  • In a medium saucepan, heat the milk over medium heat until it is hot but not boiling.
  • In a large bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
  • Slowly add the hot milk to the egg mixture, whisking constantly to prevent the eggs from cooking.
  • Strain the mixture through a fine sieve into a large bowl or measuring cup to remove any cooked egg bits.
  • Pour the custard mixture evenly into six 6-ounce custard cups or ramekins.
  • Place the custard cups in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the cups.
  • Sprinkle a little ground nutmeg on top of each custard.
  • Carefully transfer the baking dish to the oven and bake for 45-50 minutes, or until the custard is set but still slightly jiggly in the center.
  • Remove the custards from the water bath and let them cool to room temperature.
  • Refrigerate for at least 2 hours before serving.
