Andy’s Homemade Mexican Rice is a delicious, authentic side dish made with simple ingredients like rice, tomatoes, and spices. This easy-to-make recipe pairs perfectly with any Mexican meal.

  • 1 cup long-grain white rice

  • 2 tablespoons vegetable oil

  • 1/2 cup onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup tomato sauce

  • 1 3/4 cups chicken broth

  • 1 teaspoon salt

  • 1/2 teaspoon cumin

  • 1/2 teaspoon chili powder

  • 1/2 cup peas (optional)

  • 1/2 cup diced carrots (optional)

Instructions

  • Heat oil in a pan over medium heat. Add rice and sauté until golden brown.

  • Stir in onion and garlic, cooking until softened.

  • Add tomato sauce, chicken broth, salt, cumin, and chili powder. Stir well.

  • Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.

  • Add peas and carrots (if using), then fluff with a fork.

 

  • Let sit for 5 minutes before serving.

Notes

  • For extra flavor, add a pinch of smoked paprika.

 

  • Substitute chicken broth with vegetable broth for a vegetarian version.
