Andy’s Homemade Mexican Rice is a delicious, authentic side dish made with simple ingredients like rice, tomatoes, and spices. This easy-to-make recipe pairs perfectly with any Mexican meal.
1 cup long-grain white rice
2 tablespoons vegetable oil
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 cup tomato sauce
1 3/4 cups chicken broth
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 cup peas (optional)
1/2 cup diced carrots (optional)
Heat oil in a pan over medium heat. Add rice and sauté until golden brown.
Stir in onion and garlic, cooking until softened.
Add tomato sauce, chicken broth, salt, cumin, and chili powder. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
Add peas and carrots (if using), then fluff with a fork.
Let sit for 5 minutes before serving.
For extra flavor, add a pinch of smoked paprika.
Substitute chicken broth with vegetable broth for a vegetarian version.
