  • For the Cake:
    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup sour cream or plain yogurt
    • ½ cup milk
    • 1 ½ cups fresh apricots, pitted and chopped
  • For the Topping:
    • ¼ cup brown sugar
    • 1 teaspoon ground cinnamon

Instructions

  • Prepare the Batter:
    • Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round or square baking pan.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the eggs one at a time, followed by the vanilla extract.
    • Add the sour cream (or plain yogurt) and milk to the wet ingredients, mixing until well combined.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Fold in the chopped fresh apricots gently.
  • Assemble the Cake:
    • Pour the batter into the prepared baking pan, spreading it evenly.
    • In a small bowl, mix together the brown sugar and ground cinnamon for the topping.
    • Sprinkle the cinnamon brown sugar mixture evenly over the top of the batter.
  • Bake the Cake:
    • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Serve:
