This Asian ground beef noodles recipe is a flavorful and quick meal perfect for busy weeknights. Combining ground beef, noodles, and a mix of vegetables with a savory sauce, itโ€™s an easy and satisfying dish that brings the taste of Asia to your table.

Ingredients

  • Ground Beef: 1 lb
  • Noodles: 8 oz (lo mein, udon, or rice noodles)
  • Onion: 1 medium, chopped
  • Garlic: 2 cloves, minced
  • Ginger: 1 inch fresh, grated
  • Bell Pepper: 1, sliced
  • Carrots: 1 cup shredded
  • Spinach or Bok Choy: 2 cups baby spinach or bok choy
  • Soy Sauce: 1/4 cup
  • Oyster Sauce: 2 tbsp
  • Hoisin Sauce: 1 tbsp
  • Sriracha or Chili Garlic Sauce: 1 tbsp (optional)
  • Sesame Oil: 1 tsp
  • Vegetable Oil: 1 tbsp
  • Green Onions: 2, sliced for garnish
  • Sesame Seeds: Optional, for garnish

Instructions

  • Cook the noodles according to the package instructions. Drain and set aside.
  • In a large skillet or wok, heat vegetable oil over medium-high heat. Add ground beef and cook until browned.
  • Add chopped onion, minced garlic, and grated ginger to the skillet. Sautรฉ until fragrant and onions are softened.
  • Stir in sliced bell pepper and shredded carrots. Cook for 3-4 minutes until vegetables are tender.
  • Add soy sauce, oyster sauce, hoisin sauce, and sriracha (if using) to the skillet. Mix well.
  • Stir in the cooked noodles and baby spinach or bok choy. Toss until everything is well combined and the greens are wilted.
  • Drizzle with sesame oil and mix well.
  • Serve hot, garnished with sliced green onions and sesame seeds if desired.

Notes

  • Adjust the level of spice by adding more or less sriracha or chili garlic sauce.
  • Substitute ground beef with ground turkey or chicken for a lighter option.
