This Asparagus, Lemon, and Mint Soup is a vibrant, refreshing dish perfect for spring. Made with fresh asparagus, zesty lemon juice, and aromatic mint, this soup is light, healthy, and bursting with flavor. Ingredients

  • 1 lb fresh asparagus, trimmed and chopped

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 3 cups vegetable broth

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 2 tbsp fresh mint leaves, chopped

  • Salt and pepper to taste

  • Optional: plant-based or dairy yogurt for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add chopped onion and garlic, sauté until soft.

  • Add asparagus and cook for 5 minutes.

  • Pour in vegetable broth and bring to a boil.

  • Reduce heat and simmer for 10–12 minutes, until asparagus is tender.

  • Stir in lemon juice, zest, and chopped mint.

  • Use an immersion blender to puree the soup until smooth.

  • Season with salt and pepper to taste.

 

  • Serve warm, garnished with a swirl of yogurt if desired.

Notes

This soup can be served hot or chilled. Adjust lemon and mint to your taste.
