  • For the Cookie Crumbs:
    • 15 chocolate sandwich cookies (like Oreos), crushed
  • For Garnish:
    • Chocolate shavings
    • Mini chocolate chips
    • Extra Baileyโ€™s (optional)

Instructions

  1. For the Cheesecake Layer:
    In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
    Add Baileyโ€™s Irish Cream and vanilla extract, and continue beating until well combined.
    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the Baileyโ€™s cheesecake mixture until smooth.
  2. For the Chocolate Ganache:
    In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2-3 minutes, then stir until smooth and glossy. Allow to cool slightly.
  3. For the Whipped Cream Layer:
    In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the Trifle:
    In a trifle dish or individual serving cups, layer crushed chocolate cookies, a layer of Baileyโ€™s cheesecake, a layer of chocolate ganache, and a layer of whipped cream. Repeat the layers until the dish is full, finishing with a whipped cream layer.
  5. For Garnish:
    Top the trifle with chocolate shavings, mini chocolate chips, or a drizzle of Baileyโ€™s if desired. Refrigerate for at least 1 hour before serving.
