Ingredients

  • Ripe tomatoes (preferably vine-ripened or heirloom)
  • Freshly grated Parmesan cheese
  • Extra virgin olive oil
  • Minced garlic
  • Chopped fresh basil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Italian seasoning (optional)
  • Panko breadcrumbs

Instructions

  • Preheat your oven to 400ยฐF (200ยฐC).
  • Slice the tomatoes in half horizontally and place them cut side up on a baking sheet.
  • In a small bowl, mix the minced garlic, chopped basil, salt, black pepper, and Italian seasoning if using.
  • Sprinkle the tomato halves with the garlic-basil mixture.
  • Top each tomato half with a generous amount of freshly grated Parmesan cheese.
