This baked potato chicken and broccoli casserole is the ultimate comfort food.   • 3 medium potatoes, diced
  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish.
  2. Toss the diced potatoes in olive oil, garlic powder, onion powder, salt, and pepper. Spread them evenly in the baking dish and bake for 15 minutes.
  3. Remove the dish from the oven and layer the broccoli and chicken over the potatoes.
  4. In a bowl, mix sour cream, milk, and half of the shredded cheese. Pour this mixture evenly over the casserole.
