4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
4 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 cup chicken broth
1 tsp cornstarch (optional, for thickening)
¾ cup sun-dried tomatoes (in oil, drained)
2 cups fresh spinach
Fresh parsley for garnish (optional)
Preheat oven to 375°F (190°C).
Season chicken with Italian seasoning, salt, and pepper.
In a skillet, heat olive oil over medium-high heat and sear chicken until golden (2–3 mins per side).
Remove chicken and set aside.
In the same skillet, add garlic and sauté for 1 minute.
