  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ยฝ cup grated Parmesan cheese

  • 1 cup chicken broth

  • 1 tsp cornstarch (optional, for thickening)

  • ยพ cup sun-dried tomatoes (in oil, drained)

  • 2 cups fresh spinach

  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).

  • Season chicken with Italian seasoning, salt, and pepper.

  • In a skillet, heat olive oil over medium-high heat and sear chicken until golden (2โ€“3 mins per side).

  • Remove chicken and set aside.

  • In the same skillet, add garlic and sautรฉ for 1 minute.

  • Pour in chicken broth and heavy cream, then stir in Parmesan and sun-dried tomatoes. Simmer for 3โ€“4 minutes.

  • Add spinach and cook until wilted. Optional: Add cornstarch to thicken sauce.

  • Place seared chicken in a baking dish and pour sauce over.

  • Bake for 20โ€“25 minutes or until chicken is cooked through.

Notes

  • Great served with pasta, mashed potatoes, or rice.

  • You can substitute thighs for chicken breasts if preferred.
