  • 1 1/2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup BBQ sauce (plus extra for topping)
  • 1/4 cup ketchup
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350ยฐF (175ยฐC) and line a loaf pan with parchment paper or lightly grease it.
  • In a large bowl, mix the breadcrumbs and milk. Let sit for 5 minutes to absorb.
  • Add ground beef, eggs, cheddar cheese, crumbled bacon, onion, garlic, Worcestershire sauce, mustard, BBQ sauce, ketchup, salt, and pepper to the breadcrumb mixture. Mix until well combined.
  • Shape the mixture into a loaf and place it in the prepared pan.
  • Spread extra BBQ sauce over the top of the meatloaf.
  • Bake for 1 hour or until the internal temperature reaches 160ยฐF (71ยฐC).
  • Let rest for 10 minutes before slicing. Serve with extra BBQ sauce if desired.

  • For a smoky flavor, use smoked cheddar or add a few dashes of liquid smoke.
