This BBQ ranch chicken casserole recipe combines tender chicken, crispy bacon, pasta, and cheese, smothered in a tangy BBQ sauce and creamy ranch dressing. Itโ€™s an easy, crowd-pleasing dinner thatโ€™s perfect for weeknights or potlucks.

  • 3 cups cooked chicken breast, shredded or cubed
  • 8 oz pasta (penne or rotini)
  • 1 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 slices cooked bacon, crumbled
  • 1/2 cup red onion, diced
  • 1/2 cup frozen corn (optional)
  • 2 tbsp chopped fresh cilantro (optional for garnish)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375ยฐF (190ยฐC). Grease a 9x13-inch baking dish.
  • Cook pasta according to package instructions, drain, and set aside.
  • In a large bowl, mix the shredded chicken, BBQ sauce, ranch dressing, red onion, corn (if using), and half of the cheddar and mozzarella cheese.
  • Add the cooked pasta and mix until well combined. Season with salt and pepper.
  • Transfer the mixture to the prepared baking dish, spreading it evenly.
  • Top with the remaining cheddar and mozzarella cheese, and sprinkle crumbled bacon on top.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve hot.

Notes

  • For added flavor, use smoked BBQ sauce or add a bit of hot sauce for heat.
  • You can substitute rotisserie chicken for quick prep.
