  • 1 can (4 ounces) diced green chilies
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 8 small corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish
  • Optional: sour cream, avocado, lime wedges

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened.
  • Add garlic and ground beef, cooking until beef is browned.
  • Stir in enchilada sauce, green chilies, black beans, corn, cumin, chili powder, salt, and black pepper. Simmer for 5 minutes.
  • In a baking dish, layer half the tortillas, half the beef mixture, and half the cheese. Repeat layers.
  • Bake in preheated oven for 20-25 minutes until cheese is bubbly and golden.
